It's all in the initial handling of that copper tubing.  even if you had a spiral guide, it likely wouldn't get what you want.

When you first do the primary, start with brand new tubing in the coil from the box.  Move it as little as possible as you carefully set it into the supports.  Once you've bent it, that's what it's going to be.. it's a bit springy, but mostly, it takes a permanent deformation, so make sure the first time you deform it is the only time.
